Sodium bicarbonate, chemical formula NaHCO ₃, commonly known as bicarbonate of soda. White fine crystal, less soluble in water than sodium carbonate. It is also an industrial chemical. When the solid is above 50℃, it gradually decomposes into sodium carbonate, carbon dioxide and water. When it is above 270℃, it decomposes completely.
Sodium bicarbonate is an acid salt formed after neutralization of strong base and weak acid. This property allows it to be used as a leavening agent in food preparation. Sodium bicarbonate will remain sodium carbonate after the action, use too much will make the finished product have alkali taste.
